  6. Fold the omelet in half and serve.

This is a hearty bowl filled with quinoa, vegetables, and a poached egg. You can mix up the vegetables depending on what’s available and what you like.

Ingredients:

  • 1/2 cup quinoa
  • 1/4 cup cherry tomatoes, halved

  • 1/4 cup Kalamata olives, sliced
  • 1 egg
  • 1 tablespoon olive oil
